WINEMAKER NOTES
Our Reserve Cabernet is a more intense version of this varietal than our non-Reserve bottling, but offers the same unique flavors derived from our vineyard’s distinctive terroir. We age the wine in select oak barrels from the Nevers and Tronçais forests in central France-the same barrels that are typically used to create the renowned Cabernet blends from Bordeaux. These barrels were gently toasted over a wood fire to encourage notes of chocolate and coffee, along with a background of butterscotch, to emerge when the wine is oak aged. The resulting wine is a classic Cabernet with complexity and layers of opulent flavors.

NOTES TASTING
This Cab’s charm starts with an expansive nose and carries through to a long mocha-laced finish. Aromas of mulberry and black currant mingle with hints of earthy mint and forest floor. The creamy mouthfeel is subtly infused with spicy cedar notes that enrich the stylish flavors. Wild blackberry, cherry, mulberry and cassis merge with Dutch cocoa and hints of eucalyptus, tarragon and thyme. The solid structure remains in the background, supporting the complex, rich flavors without interfering with the beauty and elegance of this enchanting wine. The perfect wine to sip while savoring a juicy slice of prime rib, or an herb-encrusted rack of lamb.
