TASTING NOTES
The color is a very pale — almost white, lemon yellow. The pale
color belies the intense clean, bright aroma of nectarine and
gooseberry with hints of citrus. Mouthwatering, clean, fresh acidity
is what you notice at first sip. Rounded notes of lush passion fruit
and ripe nectarine mix with tart notes of gooseberry on the midpallet and then, toward the finish, you do get subtle notes of
crushed herbs, but the star of this wines is the luscious fruit. The
acid reappears and pulls the flavors through on a long, lingering
finish that invites you to go back for more.
FARMING & WINEMAKING
The vines are planted on glacial river terraces in the Awatere
Valley which are both cooler and windier than the rest of the
Marlborough region. Yields are lower and the vines struggle,
leading to more intensely flavored fruit. The vineyards and the
winery follow sustainable practices and are government-certified
sustainable. The winemaking follows a minimal intervention
philosophy. The grapes undergo careful destemming and pressing,
and the juice is batch-fermented in stainless steel at cool
temperatures to retain the aromas and intensity of flavor.
PAIRING
This wine is fantastic all by itself! When pairing it, this Sauvignon
Blanc works well with a range of salads. Other complementary
dishes include: broiled sea bass, garlic parmesan crusted sea
scallops, asparagus quiche, Provençal roasted chicken, crab cakes,
and a multitude of milder Asian dishes.
