Tasting Notes
Savory bacon fat on the nose along with rich notes of dark chocolate and reduced boysenberries hit you like a punch in the face while subtle notes of vanilla and black cardamom. A silky entry with flavors of sweet anise open into a firm mid palate laced with flavors of blackberry jam, tobacco, and dried figs. Firm tannins lengthen the fresh flavors of the wine well into the finish, begging to be enjoyed again.
Vinification
FERMENTATION: Fermented in a combination of Stainless steel tanks and 1 ton bins, fermentation varied between 16-25 days for rich extraction of color and tannin. Pressing was done by a combination of Bladder pressing and basket pressing, depending on the variety.
AGING: Aged for 9 months in a combination of French Oak barrels with about 15% being in new French Oak and stainless steel tanks.
