decade. During this time, Paso Robles has risen to global recognition as a world-class region for this iconic Bordeaux variety. We source
Cabernet Sauvignon from our estate vineyards as well as select
vineyards across the region to create an exemplary expression of Paso Robles Cabernet Sauvignon.
Vineyards
The 2020 Cabernet Sauvignon is a blend of fruit from three select
vineyards located in three distinct AVAs of Paso Robles, enabling us to create a wine of natural depth and complexity. The tone is set with fruit from our Quinn West estate vineyard in the Willow Creek District, a
coveted calcareous-rich terroir in the westside coastal mountains. Here, sloping terrain and cooler temperatures produce Cabernet Sauvignon with impressive structure and varietal character. We complement the estate component with fruit from the El Pomar District, which benefits from cooling marine breezes that flow inland through the Templeton Gap, a notch in the coastal mountains. Finally, a small contribution of fruit from our estate vineyard in the warmer Estrella District layers in a touch of ripe, fruity dimension.
Winemaking
Under the direction of winemakers James Schreiner and Chris
Rougeot, each lot underwent a three to four-day cold soak for gentle extraction. This was followed by warm fermentations at an average of 88 to 90 degrees to draw out further extraction of color and tannin. At the conclusion of fermentation, the free-run juice was selected to
ensure a pure, full mouthfeel. After settling, the free-run lots were racked to 40-percent new French oak barrels, where they were aged for 13 months prior to blending. The final blend was then returned to barrels for three additional months of maturation and integration. The barrel selection included 36-month seasoned premium French oak, adding fullness and elevation to the mouthfeel.
